When Thierry Germain left Bordeaux for the Loire in 1991, nobody took him seriously. Then he apprenticed under Charly Foucault of Clos Rougeard and converted his estate to biodynamics with the same consultant who guided Romanée Conti. Three decades later, he’s one of the most influential winemakers in France.

His Saumur Champigny is pure electric Cabernet Franc from tuffeau limestone. Violets, red currants, powdery dark cherry, and fine tannins that keep your palate vibrating. Some parcels are still plowed by his draft horses. Minimal sulfur, zero manipulation.
