Thierry Germain left Bordeaux for the Loire in 1991 and trained under Charly Foucault of Clos Rougeard; his Domaine des Roches Neuves is now Saumur-Champigny’s reference, farmed biodynamically. Outre Terre is Cabernet Franc raised entirely in amphora. Crunchy red fruit, graphite and startling purity. Twenty four bottles of one of the Loire’s most original reds.
