Thierry Germain left Bordeaux for the Loire in 1991 and trained under Charly Foucault of Clos Rougeard; his Domaine des Roches Neuves is now Saumur-Champigny’s reference, farmed biodynamically. La Marginale comes from old vines on tuffeau limestone, the chalky soil that gives Loire reds their freshness. Dark berries, violets and a long stony finish. Twelve bottles of his most celebrated cuvee.
