Thierry Germain left Bordeaux for the Loire in 1991 and trained under Charly Foucault of Clos Rougeard; his Domaine des Roches Neuves is now Saumur-Champigny’s reference, farmed biodynamically. Clos de l’Echelier is a walled parcel of old Cabernet Franc on pure tuffeau. Raspberry, pencil shavings and silky, chalk dusted tannins. Saumur-Champigny at grand cru level.
