Description
A blanc de noirs co-ferment of 86% Pais and 14% Carignan from Cauquenes, whole-bunch pressed and aged in neutral barrels. Pale, perfumed and bone-dry: nectarine, green apple, chalk and a whisper of oxidative complexity. Pais was making wine in this region before Cabernet Sauvignon even existed as a variety — this is that story in a glass.
