Chateau Peyrassol Rose 2025

The Commanderie de Peyrassol was founded by the Knights Templar in 1204, with the first recorded harvest in 1256. In eight centuries it has had three owners. Philippe Austruy, the current one, has spent more than twenty years restoring the vineyards since 2001.

The estate sits in the foothills of the Massif des Maures in the Var, on clay and limestone soils threaded with gravel and wild garrigue. The Château bottling draws on the oldest vines: Cinsault, Grenache, Syrah, Mourvèdre, Tibouren and Vermentino, harvested at night and aged on the lees. Certified organic since the 2022 vintage.

Pale in the glass. White peach, wild strawberry and orange zest, with a savoury note of fennel and lavender. Dry and fresh from start to finish.
