Patrick Piuze is one of the most talked-about figures in Chablis today — a Québécois-born winemaker who arrived in Burgundy in the late ‘90s and refined his winemaking skills working alongside top producers before launching his own négociant label in 2008. What sets him apart is his obsessive focus on terroir expression and his willingness to work across an unusually wide range of appellations and lieux-dits – or single vineyards, from humble Petit Chablis all the way through the Grand Crus, bottling each parcel individually. His wines are known for their precision, minerality, and clarity — marked by a gentle hand in the cellar, minimal intervention, and a preference for older oak that lets the chalky, oyster-shell character of Kimmeridgian soils really shine.
